Directions:
To Make Toffee Almonds:
1. To begin preparing the toffee almonds, heat a nonstick saucepan over low-medium heat. Add butter, brown sugar and salt. Cook, stirring continuously until butter is melted and boiling. Once boiling, stir mixture frequently, every 10-15 seconds, until mixture darkens and thickens to a toffee-like consistency, then remove from heat.
2. Add almonds to a foil-lined sheet pan or plate. Top with the toffee mixture until almonds are covered. Transfer to the refrigerator to harden.
To Make Brie Brûlée:
1. Preheat the oven to 400°F. Microwave 2 ounces of butter in a microwave-safe bowl for 30 seconds.
2. Add butternut squash cubes to a foil-lined baking sheet and drizzle with melted butter. Season butternut squash cubes with a hearty amount of salt and pepper and toss to evenly coat. Bake for 45 minutes, or until very soft and fork tender. Decrease the oven temperature to 350°F.
3. Using a sharp knife, cut off the top of the Brie. Bake in the oven in an oven-proof dish for about 5 minutes or until softened. Remove Brie from the oven.
4. Sprinkle the granulated sugar evenly on top of the Brie. Using a kitchen torch, melt and brûlée the sugar until it’s deep golden brown and caramelized.
5. Top the brûléed Brie with fresh blackberries, the cooked butternut squash, and the toffee almonds. Garnish with chopped rosemary and serve immediately with crusty bread.
