Directions:

  1. Heat oven to 350 degrees. Ingredients for cottage cheese buffalo chicken dip including shredded rotisserie chicken, hot sauce and cheddar cheese.
  2. In a blender, combine cottage cheese, Greek yogurt, hot sauce, onion powder, garlic powder, salt and pepper and blend until smooth, about 30 seconds. Shredded chicken, cottage cheese mixture, cheddar cheese, and lemon zest in a bowl.
  3. Place shredded chicken in a large bowl and pour cottage cheese mixture over top. Add 1/2 cup of cheddar and lemon zest and fold until combined and smooth. 
  4. Transfer mixture to a 10-inch cast iron skillet or a greased 8"x8" casserole dish. Spread evenly and top with remaining cheddar cheese and blue cheese crumbles. 
  5. Transfer to preheated oven and bake for 15 minutes, or until mixture is bubbly. If desired, switch oven to broiler and broil for 5 additional minutes until cheeese begins to brown. Remove from oven and garnish with sliced scallions and additional hot sauce and blue cheese, if desired. Serve immediately with tortilla chips.
